Healthy Valentine’s Day Recipes

Valentine’s Day — great for those who are in love, but even better for those who are single and can eat their feelings away. Heart shaped candies and delectable chocolates are the key to anyone’s heart, no matter their relationship status. But whether or not you have a boo this Valentine’s Day, you can treat yourself to some delicious, healthy V-Day treats. Here are three yummy treats from Two Healthy Kitchens that can satisfy your sweet tooth without sending you into a sugar coma: 

Brownies:

⅔ cup packed brown sugar

½ cup whole wheat pastry flour

⅓ cup cocoa powder

¼ teaspoon baking powder

¼ teaspoon salt

2 eggs

⅓ cup unsweetened applesauce

2 tablespoons canola oil

1 teaspoon vanilla

12 teaspoons granulated sugar for topping

Directions: preheat the oven to 350 degrees. Mix the brown sugar, cocoa, baking powder, flour and salt until combined. Add in the eggs, applesauce, canola oil, vanilla and sugar. Mix well. Pour the mixture into an 8×8 pan and bake for 28-33 minutes. 

Chocolate covered strawberry yogurt bites: 

½ cup nonfat blended strawberry Greek yogurt

3 ½ tablespoons 100% fruit seedless strawberry jelly

4 teaspoons mini chocolate chips

Directions: combine the yogurt and jelly into a medium bowl. Add the chocolate chips and stir thoroughly. Put the mixture into molds (preferably hearts for Valentine’s Day) and freeze until solid. 

Coconut Chocolate Fudge:

3 cups semi-sweet chocolate chips

⅔ cup fat free evaporated milk

1 teaspoon coconut oil

½ cup coconut flakes

Directions: microwave the chocolate chips, coconut oil and evaporated milk in a microwave safe bowl for 1 ½ minutes. Stir until smooth, then add the coconut flakes. Poor the mixture into an 8×8 pan, then refrigerate until solid.
