Morning Mug Meals

For those of you who might not have time to eat breakfast because of an early class or you simply don’t want to eat at the caf, there’s another option. All you need is a microwave, a few ingredients and a mug to make a delicious, hot breakfast in just three minutes from the comfort of your own dorm room.

Eating breakfast is the key ingredient for academic success. Besides the necessary energy to get you through your morning, additional benefits are scientifically proven. According to research completed by the National Institute of Nutrition, eating breakfast regularly has a positive influence on students’ attention, concentration, memory and school achievements. Here are three nutritious meals inspired by Taste to kick off your morning:

Omelet

Ingredients:

2 eggs

¼ cup of spinach

¼ cup of bell pepper

(any additional preferred ingredients)

pinch of salt

pinch of pepper

Directions:

  1. Mix all ingredients in a mug (or bowl)
  2. Microwave 2-3 minutes and serve

French Toast

Ingredients:

1 egg

2 tablespoon of milk

¼ teaspoon of cinnamon

½ teaspoon of vanilla

1 slice of bread (cut into squares)

(any other desired toppings)

Directions: 

  1. In a separate container, mix the egg, milk, cinnamon and vanilla
  2. Add bread pieces to a mug and pour egg mixture on top
  3. Microwave for 1½ minutes and serve

Almond Oatmeal

Ingredients:

¾ cup of hot water or milk

½ cup of instant oatmeal

2 tablespoons of slivered almonds

2 teaspoons of your choice of sugar

1 teaspoon of chia seeds

(any other desired toppings)

Directions:

  1. Microwave water or milk for 1 minute
  2. Pour the water or milk over oatmeal and other ingredients
  3. Add other desired toppings and serve

These three recipes are easy to make even when you’re on-the-go. Senior PLNU nursing major Jonathan Gomez says, “Learning how to cook breakfast with a microwave is very convenient, and it saves me time that I don’t have in the morning.”
